Here is the recipe I’m following.  I’ll be sure to let you all know how it goes!!

  • Preheat oven to about 375*
  • Use about 1 OXO salad spinner’s worth of kale (which was a stuffed grocery store veggie bag). Tear the leaves off the thick stems into bite size pieces. Spread out on cookie sheets.
  • Drizzle with about 2 tsp of olive oil
  • Sprinkle with Parmesan, Asiago or your seasonings of choice. Plus a sprinkle of kosher salt.
  • Bake for about 15 minutes, until edges are brown and kale is crispy when moved in pan.

Thank you so much for posting this! I have heard so much about kale chips but am absolutely useless in the kitchen. I guess I need to go buy kale… :)

 Well guys, it was a success!  My husband was terrified at first: kept asking questions, had this skeptical look on his face, etc.  I sprinkled some sea salt and parmesan cheese on them before putting in the oven, and wah-la!

One thing to note — it’s hard to peer in the oven and be able to tell when they’re done.  You really need to keep a close eye on them so they don’t burn, and pull the pan out of the oven occasionally and feel the chips.  They should be really crispy and will move around on the pan easily.

Also, easy on the salt… I overdid it a little.  Overall, a success!  I think I ate too many b/c I had a little tummy ache.  :)

Oh yeah…and try them with ketchup!  Sounds weird…but it is sooo good!!
